The Monster Duck

Ingredients

  • 4 slices Duck bacon, frozen
  • 2 Eggs
  • 1 Tomato
  • 6 leaves Boston lettuce
  • 2 thick slices Country loaf
  • 100ml Gochujang
  • 150ml Mayonnaise
  • 1 Juice of 1 lemon
  • 25ml Maple syrup
  • 50ml Canola oil
  • to taste Salt & pepper

Recipe Preparation

 Fry duck bacon to desired doneness and set aside. Slice the tomato. In a skillet, fry the eggs sunny side up. Mix the gochujang, mayonnaise, lemon juice and maple syrup to make the spread. Toast the bread slices. 


Spread the 2 slices of bread with gochujang sauce. Place 3 lettuce leaves on each slice of bread. Place tomato slices on one of the lettuce-filled bread slices. Season the tomatoes with salt and pepper to taste. Place the two sunny side up eggs, being careful not to break them. Add the slices of duck bacon. Cover with the other slice of bread. Cut in half and press on the bread just before serving so that the egg yolk breaks and runs down the sandwich.
